Parmigiano Reggiano 40/48 month - Red Cow My wife and I experienced this cheese last year during our vacation in Italy. We made an intentional stop in the town of Pienza to seek out the sheep's milk pecorino and were fortunate to sample some of the "Red Cow" Parmigiano at a great local cheese shop. We liked it so much I was determined to find a way to obtain it here in the US. Parmashop carries this incredible cheese and does an excellent job with the shipping. Simply the best Parmigiano you can get. Wonderful!
